This recipe comes from another Humble Housewife that now lives in Texas. She used to call it ‘Chicken Divan’ and it was one of my absoulute favorite meals she made! I’d go back for seconds or thirds… it’s that addicting! Now, I love making it for my family just as much.

Layers of deliciousness on top of layers of deliciousness on top of layers of deliciousness on top of broccoli… which is also delicious!
The hardest part of making this dinner is waiting for it to bake.
Start building!
Layer #1: Start by layering a bag of frozen broccoli on the bottom of a large casserole dish. I’m not shy when it comes to seasonings, so sprinkle a little salt and pepper on it!
Layer #2: Chicken. My favorite method of prepping shredded chicken is in the Instant Pot. You can also boil it, or pull it from a rotisserie chicken, or even buy some pre-shredded chicken. Whichever way you go, evenly spread the the chicken over the broccoli.

Layer #3: Rich and creamy goodness! Mix up a can of cream of chicken soup, a can of cream of celery soup and 1 cup of mayonnaise. Spoon over the layer of chicken.
Layer #4: Cheese. Sprinkle with cheese – cheddar or colby jack, or a combo of the two! If you’re up for grating your own cheese, it makes all the difference! I have this attachment for my KitchenAid and it’s perfect when it comes to shredding large amounts of cheese. Freshly shredded cheese just melts and incorporates so much better than bagged shredded cheese. * jumps off soapbox

Layer #5: Stuffing! I use Stove Top chicken stuffing because it’s quick and easy. It’s full of flavor and adds a whole different dimension to this casserole. Prepare stuffing according to the directions on the package, then fluff it up and top the casserole with it.
Get baking!
Cover your casserole with foil and bake in a toasty 350 degree oven for 30 minutes. Remove the foil and bake uncovered for another 30 minutes. These cheese should be bubbling and stuffing a bit crunchy.
Put a few heaping scoops in a bowl and enjoy!
Chicken Crack Casserole
Ingredients
- 16 oz frozen broccoli florets
- 1 can cream of chicken soup
- 1 can cream of celery soup
- 1 cup mayonnaise
- 1½ lbs shredded chicken
- 2-3 cups shredded cheese colby jack and cheddar
- 1 box Stove Top chicken stuffing
- 4 tbsp butter for preparing stuffing
Instructions
- Preheat oven to 350°.
- Layer frozen broccoli on the bottom of a casserole dish.
- Add a layer of shredded chicken on top of the broccoli.
- Combine soups and mayo, then layer on top of chicken.
- Sprinkle shredded cheese over the casserole.
- Top with prepared stuffing mix.
- Cover with foil and bake for 30 minutes.
- Remove foil and bake an additional 30 minutes.
