
There are plenty of ways to make this pizza your own! Swap the barbecue sauce for buffalo sauce, alfredo sauce, or traditional pizza sauce and top with your favorite toppings!

Low Carb Dinner
I originally found this recipe on Wholesome Yum while on a low carb kick, but have kept it in the dinner rotation even after I fell off that wagon.
It’s a fairly simple recipe, but takes some planning ahead time to get the crust baked and rested before adding the toppings.

the “Dough”
It’s not even a little bit like dough, but I’m not really sure what else to call it…
Use your hands to mix 1 pound of ground chicken with 2 eggs, cheeses and seasonings.

Press the chicken “dough” mixture into a thin layer on a baking sheet with parchment paper. Bake at 400 degrees for 20 minutes.
Remove from the oven and let rest for 10 minutes.
I like to flip my crust at this point, so the rough top is on the bottom and seems more ‘crusty.’ I use a silicone baking sheet and place it on top of the chicken crust and flip it, then toss the parchment paper!
Make it a Pizza

Make sure to use plenty of sauce before adding the rest or your toppings. You’ll want to take the sauce all the way to the edge too, not leaving a ‘crust’ like a regular carby pizza 😉
I used BBQ sauce, shredded cheddar, Italian cheeses and sliced red onions.
Pop your ‘za back in the oven for another 15 minutes. Broil for the last few minutes if your cheese needs a little extra bubble!
Top it off once it’s removed from the oven with some sliced green onions, and enjoy!

If you’re up for grating your own cheese, it makes all the difference! I have this attachment for my KitchenAid and it’s perfect when it comes to shredding large amounts of cheese. Freshly shredded cheese just melts and incorporates so much better than bagged shredded cheese. * jumps off soapbox
Do you guys have that completely unnecessary thing in your kitchen that you absolutely love? My mom gave me a Rachel Ray ‘garbage bowl’ when I moved into my first apartment. Thanks Mom! It’s moved with me to several homes since then. It’s really just a bowl I use for all of my cooking scraps, but prettier.

BBQ Chicken Crust Pizza
Ingredients
Pizza Crust
- 1 lb ground chicken
- ½ cup grated parmesan cheese
- ¼ cup shredded italian cheese parmesan, asiago or combination
- 2 eggs
- ½ tsp salt
- 2 tsp minced garlic
- 1 tsp italian seasoning
Pizza Toppings
- bbq sauce
- shredded cheese
- sliced red onion
- green onion
Instructions
- Preheat oven to 400°.
- Mix together crust ingredients and press thinly onto a baking sheet lined with parchment paper.
- Bake for 20 minutes.
- Remove pizza from the oven, and let it rest for 10 minutes.
- Top the pizza with your favorite toppings and return to the oven for 15 minutes.
- Broil an additional few minutes to brown the cheese, if needed.
