These Trader Joe’s pumpkin brie bites are another yummy recipe we can all thank TikTok for! It’s a super easy recipe, and there are so many ways to tweak these puff pastry fluffs into your favorite flavors.

We have a nut allergy in the family, so excluded the candied pecans when we made them. You could swap the pecans for walnuts, or the pumpkin spread for another fruity jam… maybe raspberry or apricot. Yum!
Trader Joe’s
I freaking love Trader Joe’s. Unfortunately, the closest one to me is about an hour and a half drive. I’ve heard of Trader Joe’s being referred to as the Aldi of natural food, and 100% agree with that!
I love their products, and the store is simple and not overwhelming. Trader Joe’s carries their own brand, so the store is a lot smaller than your average grocery store. Their items are reasonably priced while still being great quality. I really wish I had one closer, and didn’t have to pack a cooler and road trip… That’s not the cooler/road trip I’m about 😉
They’ve also got a fresh produce section and some fun seasonal items! Like the pumpkin spread, you can’t get that all year. I have some caprese raviolis (also seasonal) from there I’ll be making for dinner tonight.

The Ingredients
- Puff Pastry
- Pumpkin Spread
- Mini Brie Bites
- Candied Pecans
- Thyme
You’ll also need a muffin tin. I have a lot of fun with these square ones! They’re great for brownies or funky muffins too.
Assemble the Puffs
Cut sheet of puff pastry into 16 equal pieces. Cut in half each direction, then each of those quarters in half in each direction.
Spray your muffin pan and place one of the puff squares in each spot.
Spoon in about 1 tablespoon of pumpkin spread. Or whatever fruity spread you’re using. Apple butter maybe?! There are so many ways I want to try these!
Cut each of the brie bites in quarters and place one in each of the muffins.
Sprinkle with thyme (fresh or dried) and chopped nuts if you’re using them.
Bake at 375° for 15 minutes
Bake for 15 minutes, or until the pastry has fully puffed up. Remove the brie bites from the muffin tin and place on a cooling rack.
Allow to cool before serving… I get impatient too, but they’re kind of hot and drippy gooey straight from the oven. That’s your warning.
Pumpkin bites are a great appetizer or addition to your brunch menu. I’ll be using them for my Thanksgiving pregame!
Pumpkin Brie Bites

Ingredients
- 1½ rolls frozen puff pastry thawed
- 1 cup pumpkin spread
- 5 mini brie bites quartered – or brie cut into ¾" – 1" cubes
- candied pecans
- thyme fresh or dried for sprinkling
Instructions
- Cut puff pastry into 2-3" squares/rectangles. You should get 12-16 pieces per sheet.
- Spray your muffin pan and place one of the puff squares in each spot.
- Spoon in about 1 tablespoon of pumpkin spread.
- Cut each of the brie bites in quarters and place one in each of the muffins.
- Sprinkle with thyme (fresh or dried) and chopped nuts.
