3 ingredients and a cast iron skillet. That’s all you need to make delicious little bacon wrapped smokies!
The recipe is super simple and inexpensive. These are a perfect little finger food for snacks, game day and even pot lucks. They’ll be just fine in a warm crockpot.

Bacon + Smokies + Brown Sugar (oh my)
You’ll want to avoid a thick cut bacon when making your bacon wrapped smokies. I prefer to use center cut bacon. and usually get the Hillshire Farms Lit’l Smokies.
Dark brown sugar is 100% the way to go here. Light brown sugar is great for baking, but dark brown sugar has a deeper flavor and should be used in your more savory dishes… just like this one!
Cast Iron
Everyone should have a good cast iron skillet. I was way late to the game and only got mine last Christmas. I’m by no means a master, but I’m working on it 😉 I love that they can go from the stovetop to the over.
If you’re new to cast iron, you’ll want to start with a pre-seasoned skillet. With proper care, they’ll last forever. And proper care is super simple!
- Clean then without using soap – I just use hot water and my Scrub Daddy
- Make sure to towel dry after each wash. It’s a big no-no to put them away wet and it’ll cause them to rust.
- Use shortening or oil on a paper towel to rub a small amount over the entire pan after each use – inside, outside, handle, all of it
Get Rollin’
Start by cutting the bacon into thirds. Wrap one piece of bacon around a little smokie and secure with a toothpick.
Place the wrapped smokies in your cast iron skillet. Try your best to keep them in a single layer, but it’ll be okay if you’ve got some extras stacked… I did and can assure you they tasted delicious!
Once your cast iron skillet is full of the bacon wrapped smokies, you can sprinkle the brown sugar on them!
Bake at 350 for 15 minutes, then 425 for another 15 minutes
Your smokies will be surrounded but a sweet bubbling mess of the brown sugar and bacon grease. Remove the smokies from the cast iron and place them in a serving bowl or small crockpot on warm setting.
Cast iron holds heat more than your average pan, so your smokies could start overcooking if you leave them in the skillet.

- 2 14 oz packages little smokies
- 1 12 oz package bacon
- ½ – ¾ cup dark brown sugar
Instructions
- Cut bacon into thirds.
- Wrap each smokie with a piece of bacon and secure with a toothpick.
- Place bacon wrapped smokies into cast iron skillet.
- Sprinkle with ½ – ¾ cup dark brown sugar.
- Bake at 350° for 15 minutes, then turn the heat up to 425° for another 15 minutes.
- Remove smokies from skillet and place on serving platter or in a crockpot.
