Casseroles are one of my favorite food groups! They’re easy to assemble, usually require a few basic ingredients, and are hands off for cook time. This chicken cordon bleu casserole checks all of those boxes, plus it’s packed with flavor.

Casseroles

Casseroles are a perfect for a weeknight family meal! Or a weekend meal, or really just about anytime you’re hungry. They’re even great for picky eaters! This chicken cordon bleu casserole takes about 5 minutes to whip up and cooks in about 45 minutes.

The only bad thing (but not really) about casseroles is they can be hard to reduce the size of the recipe to make fewer servings. If you’re not feeding the family and don’t want to eat casserole leftovers for the next few days, use two 8×8 dishes instead of one 9×13! One for the oven. One for the freezer. Thaw your frozen casserole in the fridge before baking.

Shredded Chicken

One of my favorite ways to make shredded chicken is in the Instant Pot.

If you’re short on time, grab a rotisserie chicken from and shred it. They’re usually super moist and tender… and obvious bonus because they’re already cooked!

3 Ingredient Dijon Cream Sauce

The sauce for this chicken cordon bleu casserole is a mix of three basic ingredients.

  1. Milk. 2) Dijon mustard. 3) Condensed cream of chicken soup.

What casserole would be complete without a condensed cream soup of some kind?! I recommend the Campbell’s cream of chicken with herbs soup for a little extra flavor.

Putting the Chicken Cordon Bleu Casserole Together

Layer it up! No fancy techniques needed here.

Start with the shredded chicken as your bottom layer.

Add pieces of ham. I used a thick cut premium carved ham from Hillshire Farms. Season with salt and pepper.

Scoop dijon cream sauce on top of the meat. Sprinkle with fresh thyme for a little extra flavor oomph!

Layer slices of Swiss cheese to cover.

Top off with prepared chicken flavored Stove Top Stuffing. You can substitute with the herb flavor if that’s your preference.

Bake 350 covered with foil for 20 minutes. Uncover and bake an addition 25-30 minutes.

Ingredients
  

  • 4 cups shredded chicken
  • 1 cup diced ham use carved ham
  • 1 can condensed cream of chicken with herbs soup
  • 2 tbsp dijon mustard
  • ¼ cup milk
  • 8 slices Swiss cheese
  • 1 box Chicken Stove Top Stuffing Mix prepared
  • 4 tbsp butter to prepare stuffing mix
  • fresh thyme optional
  • salt and pepper

Instructions
 

  • In a small bowl combine cream of chicken soup, milk and dijon mustard.
  • Prepare stuffing mix as directed on the box.
  • Layer chicken and ham in the bottom of a 9×13 casserole dish. Top with cream sauce. Sprinkle with fresh thyme.
  • Cover with sliced Swiss cheese then top with prepared stuffing mix.
  • Cover with foil and bake 350° for 20 minutes. Remove foil and bake an additional 25 minutes.
