What’s not to love about crockpot meals?! You could make a delicious home cooked meal with little effort, even if you’re a horrible cook! Something about the way all the flavors meld together is magical… and so flipping easy! Bibbity Bobbity Boo! Viola! Abracadabra! Dinner be done 😉
Patience is the name of the game for crockpot meals. Fortunately, you can just add everything and leave it for hours. No need to watch it like paint drying.

Sear the Roast
This is a simple first step that’ll make all the difference. Searing your roast will help lock in all the juices and adds a bunch of flavor! Season the chuck roast with salt and pepper. Heat oil in a skillet over medium heat and sear the roast until browned, about 2 minutes on each side.
Prep Veggies
Remove skin from onion and cut into chunks. Peel carrots and cut into 2-3″ chunks. Rinse potatoes. Easy peasy.
Load the Crockpot
Place your seared chuck roast in the bottom of your crockpot. Toss in carrots, potatoes, garlic and onions to surround it. Drizzle with worcestershire sauce then top with Italian, ranch and cajun seasonings. Add 2 cups of beef broth.
8-10 Hours Later…
I haven’t upgraded my Crockpot to a timed version yet, but I have a good one on my wishlist!
Until then, I’ll continue to put sticky notes on the lid.
Crockpot Pot Roast

Ingredients
- 2.5-3 lb chuck roast
- Salt and pepper
- 2 tbsp oil avocado or olive oil
- 6-8 cloves garlic
- 1 lb carrots
- 1 lb potatoes baby blonde or gold
- 1 yellow onion
- 1 packet Italian seasoning mix
- 1 packet ranch salad dressing and seasoning mix
- 3 tsp cajun seasoning
- 3 tbsp worcestershire sauce
- 2 cups beef stock
Instructions
Prepare the Roast
- Season chuck roast with salt and pepper.
- Heat 2 tbsp of oil in a skillet over medium heat and sear the roast until browned, about 2 minutes on each side.
Prep Veggies

- Peel carrots and cut into 2-3" chunks.
- Rinse potatoes.
Slow Cooker
- Place seared chuck roast into the slow cooker.
- Surround with onion, potatoes, carrots, and garlic cloves.
- Top with worcestershire sauce then sprinkle with Italian seasoning, ranch seasoning mix and cajun seasoning.
- Pour 2 cups of beef stock over roast and veggies.
- Cook on low for 8-10 hours.
