Banana Nut Bruffins

Banana Bread meets Banana Nut Muffins... and it's a match made in oven heaven! Banana nut bruffins are super easy to make, and you don't have to wait as long as you do for the full bread loaf to bake. And these babies are delicious fresh out of the oven, and the walnuts take these to the next level!

Ingredients

  • 2-3 bananas mashed
  • 2 eggs
  • 1 cup sugar
  • ½ cup butter softened
  • 1 tsp vanilla
  • 1 ½ cups flour
  • 1 tsp baking soda
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ½ cup sour milk ½ cup milk with 1 tsp distilled white vinegar (mix and rest 10 minutes)
  • ½ cup chopped walnuts

Instructions

  • Preheat oven to 350°.
  • Cream butter and sugar in an upright mixer or large bowl.
  • Mix mashed bananas with 2 eggs and vanilla, then add to mixing bowl.
  • Combine flour, baking soda, cinnamon and nutmeg.
  • Alternate adding dry ingredients and sour milk to the mixing bowl.
  • Stir in 1/2 cup chopped walnuts saving a few to sprinkle on top before baking.
  • Add batter to oiled muffin tin.
  • Bake for 18-20 minutes.
