These individual mini meatloaves are perfectly sized for 2, full of flavor, deliciously juicy and cooked in less than 30 minutes! A classic comfort food recipe you’re sure to make again and again.

You can easily double the recipe to serve 4 or make extras for leftovers.

Classic Meatloaf Recipe

This meatloaf recipe is comfort food at its finest! I love a good meatloaf. One that’s not too dry, and not too moist and served up with some veggies and potatoes… or some mac and cheese… OMG. Let’s go!

I’m sure one thing most families have is their own meatloaf recipe. My family may actually has two. Surprise! This isn’t one of them 😉 But it’s definitely the one I’ll be passing down!

Mix Your Mini Loaves

In a bowl, combine one pound of lean ground beef, 1 egg, 2 tbsp ketchup, 2 tbsp worcestershire sauce, 1 tsp dijon mustard, 2 tbsp panko breadcrumbs, 1/4 cup finely chopped red onion, 2 cloves minced garlic, 1/2 tsp chopped fresh thyme and salt and pepper.

Use your hands to mix everything together. Be careful not to overmix!

Separate the meat mixture into two equal parts and form them into little loaves on a baking sheet.

Brush tops with ketchup, about 1 tbsp each.

Bake at 450 for 20-25 minutes.

  • Baking Sheet

Ingredients
  

  • 1 lb lean ground beef
  • 1 egg scrambled
  • ¼ cup ketchup divided
  • 2 tbsp worcestershire sauce
  • 1 tsp dijon mustard
  • 2 tbsp panko
  • ¼ red onion finely chopped
  • 2 cloves minced garlic
  • ½ tsp fresh thyme or ¼ tsp dried
  • salt and pepper

Instructions
 

  • Add ground beef, egg, 2 tbsp ketchup, worcestershire sauce, dijon mustard, panko breadcrumbs, red onion, minced garlic, thyme, salt and pepper to a medium bowl. Gently mix to combine.
  • Separate into 2 mini loaves and place on a baking sheet lined with parchment paper.
  • Brush tops with ketchup.
  • Bake at 450° for 20-25 minutes or until internal temperature is 165°.
