One Pan Cajun Skillet

I love me some one pan recipes! This one is packed with veggies disguised with some southern spice. The one pan Cajun skillet comes together so quickly! It’ll probably take as long to chop your meats and veggies as it does for the whole dish to cook.

Veggies veggies and more veggies!

I promised you a healthy dose of veggies, and here they are. I used a red bell pepper, zucchini, yellow squash and asparagus.

You can add in onions, mushrooms or any other veggies you’d like; don’t let me tell you how to live 😉

Once all of your veggies have been cleaned and sliced, toss them in a large bowl with 2 tsp of Cajun seasoning.

Shrimp & Sausage

Thaw 1lb of raw shrimp, then peel and devein them.

I removed the tails on mine also. Some might argue the flavor is better when shrimp is cooked with tails on, but I’d argue it’s easier to eat when you aren’t interrupted by the extra step of pulling them off between bites. But like I said, I’m not here to tell you how to live… do what makes ya happy!

Slice your sausage into bite sized pieces. We love the Zatarain’s Andouille sausage, and will use half a package for this recipe.

Toss with 1 tsp of Cajun seasoning and 1 tsp of Creole seasoning. If you don’t have Creole seasoning in your pantry… 1) get some, because it’s a yummy staple and 2) it’ll still taste good with Cajun seasoning alone so go ahead and use 2 tsp of the Cajun good stuff! If you’re more sensitive to spice, just cut down the amount you add.

Here’s the easy one pan part!

Heat 2 tbsp of oil in a large skillet over medium heat. Avocado oil is always a good choice, but olive or vegetable oil will work well too.

Add the veggies to your hot skillet and cook for 5-7 minutes. Add in the shrimp and sausage when the vegetables start to soften. Cook an additional 5 minutes or so, until the shrimp is fully cooked and no longer translucent.

Serve it!

One pan Cajun skillet is delicious on its own, but I love it served over sneaky rice. Sneaky rice is a 50/50 mix of Jasmine rice and cauliflower rice, or brown rice and cauliflower rice for an even healthier option. It’s a super easy way to remove some carbs and add some veggies into your meal. You don’t even notice the cauliflower when they’re mixed!

Cajun Shrimp and Sausage Veggie Skillet

Equipment

  • large skillet

Ingredients
  

  • 1 lb raw shrimp
  • 1/2 package andouille sausage sliced
  • 1 red bell pepper sliced and halved
  • 1 zucchini sliced and halved
  • 1 yellow squash sliced and halved
  • 12 stalks asparagus cut into 2-3" sections
  • 2 tbsp oil olive or avocado oil
  • 1 tsp creole seasoning
  • 3 tsp cajun seasoning

Instructions
 

  • Make sure shrimp is peeled and deveined.
  • Add cleaned shrimp to a bowl with sliced sausage. Sprinkle with 1 tsp of cajun seasoning and 1 tsp creole seasoning. Set aside.
  • Combine vegetables in a large bowl and toss with remaining seasoning.
  • Heat oil in a large skillet over medium heat. Add veggies and cook for 5-7 minutes, stirring a few times, until vegetables start to soften.
  • Add sausage and shrimp to the skillet. Cook for an 5 minutes or until shrimp is fully cooked.
