Sweet and spicy oven roasted goodness for the win.

I love love love roasted veggies! These sweet and spicy cauliflower slices are no exception. Whip them up as an easy addition to just about any meal.

Get Choppin’

This recipe used about 2/3 of a large head of cauliflower. I prefer thick slices, so I start by cutting the cauliflower right down the middle – through the stem and all. I then continue slicing to make 1/2″ slices. Even if you’re going to cut your cauliflower down into florets, I’ve found this is the easiest method.

Side note: Do you guys have that completely unnecessary thing in your kitchen that you absolutely love? My mom gave me a Rachel Ray ‘garbage bowl’ when I moved into my first apartment. Thanks Mom! It’s moved with me to several homes since then. It’s really just a bowl I use for all of my cooking scraps, but prettier. If you have no idea what i’m talking about, here’s a link!

Get Down with the Sweetness

Put your cauliflower slices in a large bowl and top with olive oil, maple syrup, sriracha and soy sauce. Stir ’em up and make sure they’re evenly coated with the sweet and spicy goodness in all those nooks and crannies.

You’ll want to spread them out on a foil or parchment lined baking sheet with as much space as possible between them for even cooking. This is a good rule of thumb for any roasted veggies… if they’re too close you’ll steam them more than roast them… and you’re really miss that crunchiness!

This is the monster of a sheet pan I use for all of my roasted veggie recipes!

Big Baking Sheet

Roast at 400 degrees for 30 minutes. If you’re using smaller florets, reduce time to about 20 minutes.

Sweet and spicy oven roasted cauliflower makes a wonderful side dish for any chicken, steak or pork dishes. This time, we had them with broccoli and cheese stuffed chicken breasts!

Equipment

  • Baking Sheet

Ingredients
  

  • 1 small head cauliflower
  • 3 tbsp olive oil
  • 3 tbsp maple syrup
  • 3 tbsp sriracha sauce
  • 1 tbsp soy sauce
  • ground pepper

Instructions
 

  • Preheat oven to 400°
  • Add cauliflower pieces to a large bowl and top with olive oil, syrup, sriracha and soy sauce. Stir until evenly coated.
  • Spread cauliflower pieces on a lined baking sheet (tin foil or parchment will do) leaving enough space between pieces for them to roast. Use 2 pans if necessary.
  • Bake/Roast 20-30 minutes.

Notes

If you use cauliflower florets rather than larger slices, cooking time may need to be reduced to around 20 minutes.
